Pizza in a mug is pizza for one! Of course, it's not the same as regular pizza, but it's quick, easy, and delicious. The more cheese the better! Ingredients
Mix the flour, baking powder, baking soda and salt into a large, microwaveable mug. Add milk and oil and stir. Spread tomato sauce on top of batter. Sprinkle on cheese, pepperoni, and Italian herbs. This is what the monkey bread was supposed to turn out like but... we made a few mistakes. But the video is totally worth watching because it's sooo cute!
To begin with.... we used ginger instead of garlic. That was a big mistake. The bottles looked so alike! I just grabbed it off the shelf and Susie dumped it in and I figured out because of the smell. Secondly, the recipe says not to use flaky biscuits and we did because thats all they had at the store. Thirdly, I should of kneaded the biscuits together and stretched them around the whole pan so that it would be like the big piece of bread above and not several little pieces. But even though we messed it all up, it tasted pretty good. So, in case you want to try out this monkey bread and do it the right way, here's the recipe.

Garlic Parmesan Pull-Apart Bread
Ingredients
Preheat the oven to 350 degrees. Throw the cold stick of butter in a bundt pan and let it melt in the preheating oven. While the butter melts, cut the Grands biscuits into quarters. In a bowl, toss the biscuit pieces, garlic, Italian Seasoning, and Parmesan cheese together. Once the butter is melted, add the biscuit mixture to the pan, sprinkling with any cheese and garlic that gets let behind in the bowl. Bake at 350 degrees for 20- 22 minutes until golden brown. Turn out on a dish and enjoy!

Anyway, about this amazing Asian dish, I first got the recipe from a friend at Grace Community Church, Michelle Mkinnon. When my mom had surgery she brought this meal over twice and it was a hit! So she gave me the recipe and we've made it several times since. Now I want to share it with you guys so that you can try it! Seriously, this stuff is awesome. Maybe its not quite as good as the taco casserole my mom makes that I requested on my birthday (click the link) astounding-taco-cornbread-casserole.html but it's still very good.
So the actual stir fry is a mix of vegetables, meat, and sauce. You can use any meat. Michell used to throw in some burger meat which made it delish! Don't worry about chopping a bunch of vegetables, you can buy a bag of frozen asian vegetables. If you'd rather go organic and chop your own I seriously reccommend this chopper. My mom has one and it makes chopping vegetables (especially onions) a blast! This peeler, too is really amazing, especially with potatoes. (Affiliate Links)
As I was saying, the stir fry is vegetables and meat (mostly) and you can make some rice on the side. Michelle always did white rice but we did brown. (White rice is super good but brown is a lot healthier.) Mom threw in some spring rolls as well that she'd bought frozen and microwaved. Now I'll quit talking and give you the recipe.
P. S. Don't be surprised about the peanut butter and honey. They're the secret ingredients to make this awesome! ;)
Asian Stir Fry
Serving: 1 Ingredients
Brown meat in a wok or large pan. Add the bag of frozen vegetables (or fresh veggies) and some soy sauce. Stir. Add the onion, pepper, spices, and more soy sauce. Then add the peanut butter and honey and more soy sauce if necessary. If the stir fry looks dry, add a little water. When the vegetables are thoroughly cooked, you're all done! Serve with rice. To make the rice in a rice cooker, put 2 cups of rice and 5 cups of water into the rice cooker and cook.

These soft pretzels are easy and delicious! Below the recipe, I have instructions for making a super simple but delicious honey mustard dip! Please pin the picture by waving your mouse over it and clicking the little red p in the corner! I'm not the best of cooks so I have my messups. I didn't spray the pan and the parchment paper stuck to the pretzels. Please spray your parchment paper with non-stick spray so that won't happen to you!

This egg and bacon pie is easy and delicious! I found this recipe because I was supposed to make Quiche Lorraine for school and I found this recipe. (Quiche Lorraine is basicly Egg and Bacon Pie but since it sounded too complicated, I changed the name.) It's very creamy and delicious and you can make the crust homemade! (Don't worry it's super simple.) Egg and Bacon Pie is perfect for breakfast, lunch, dinner, or even for a snack! If you would prefer to use ham instead of bacon you can, but I think bacon is easier. Easy Quiche Lorraine Recipe

Preheat oven to 375 degrees F. Measure the flour into a mixing bowl and mix in the salt, add the shortening. Using a pastry cutter or two butter knives, cut in until you have it the consistency of coarse meal. (If you have a food proccessor, throw all the crust ingredients in and blend.) Sprinkle with the cold water one tablespoon at a time and mix lightly with a fork until the dough clings together and cleans easily from the bowl. Form a flattened ball with the pastry. Use a lightly floured surface and rolling pin to roll the flattened ball into a flat disk about 1 inch larger than the pie plate you are putting it in. Roll the pastry over your rolling pin and transfer it to the pie plate. Unroll it and ease into place, being careful not to stretch the pastry. Fold the edges down and pinch flute an edge around the crust. Filling: In a bowl, mix together eggs, cream, onion, ham and cheese. (If you don't want the onions to crunch, try frying the onions and bacon first. I didn't and it came out fine exept that the onions crunched. Also, try cutting the bacon into pieces with sissors. It's easier. And don't overdo the cheese. It will mess up the texture.) Pour the filling into the pie shell. Place the quiche into the preheated oven and bake for 35-40 minutes, or until a knife inserted into the middle of the quiche comes out clean. You can sprinkle extra cheese on top when you're finished.

A food proccessor is very helpful for making the crust. You can just throw all the crust ingredients in and it with become dough in a few seconds without you having to mix with a fork and knead into a ball.

These are super tasty muffins that aren't too sour or too sweet! Mine didn't come out very yellow because I used a healthy brown sugar (I used regular powdered sugar for the glaze) to make it healthier. If you use brown sugar you can add a little yellow food coloring but really it tastes the same so it doesn't matter what color it is!
I made this chex mix or puppy chow for Valentines Day. It didn't exactly turn out the way it was supposed to because my white chocolate wouldn't melt into a nice liquid. It was the texture of butter. So the cake mix and powdered sugar wouldn't stick nicely. They don't sell red candy melts in Mexico so I had to just make it all white. Sweetheart Chex Mix

Directions Start by dividing the chex mix into two bowls. (2½ cup in each) In microwave safe dish, melt the 5 ounces of white chocolate chips. Add ½ teaspoon shortening so that the chocolate will spread evenly. Microwave 30 seconds at a time and be careful not to burn the chocolate. Dump this in the first bowl of chex and mix evenly to coat all of the chex cereal. Melt the red candy melts next also checking and stirring the candy melts 30 seconds at a time. Once this is melted, pour this over the second bowl of divided chex and mix until coated. In two gallon size ziplock bags, put ½ cup strawberry cake mix and ¼ cup powdered sugar in each bag. Dump each bowl of chex mix in each bag and shake until coated with the powdered sugar and strawberry powdered cake mix. Now if you want to, you may add the mnms.

Ingredients
Add bacon and kielbasa to a 6 quart Dutch oven then turn the heat to medium. Saute until bacon is golden brown then scoop the meats onto a plate, reserving bacon grease in the pot. Add carrots, celery and shallot then saute until tender, 8-10 minutes - adding a splash of chicken broth then placing a lid on top to speed up softening if it’s taking too long. Add garlic then saute until very fragrant, 1 minute. Add chicken broth plus 1 cup milk to the pot then turn heat up medium-high to bring soup to a bubble - NOT a boil. Add potatoes then turn heat down to medium and simmer until tender, 5-7 minutes. Meanwhile, whisk together flour and remaining 1/2 cup milk until very smooth. Add browned bacon and kielbasa back into the pot then stream in flour/milk mixture and simmer until soup has slightly thickened, 5 minutes. Add sweet corn then simmer until heated through, 1 minute. Taste then add seasoned salt to taste, and lots of pepper. Scoop into bowls then serve topped with green onions. In those days when we were trying to save money, Mom did a lot of baking bread instead of buying it. It's so much cheaper and sooooo tasty! Ingredients: 4 cups white flour 1 tsp sugar 2 tsp salt 3⁄4 tsp yeast 2 cups ice water Directions: Whisk together in a bowl the first four ingredients, then stir in the cold water. Mix the dough together until it looks like dough with no flour in sight. If it's too sticky or too dry, add more flour or cold water. Paint the top of the dough with canola or vegetable oil and cover it with a towel. Place the bowl of dough in a warm place to rise overnight or 12-18 hours. When it's done rising, put the dough in a standard size dutch oven pot and put it in your oven. (Preheat it to about 400 degrees f.) My mom likes to bake it about 20 minutes until it looks golden brown and smells good. If you like your bread less soft, you can bake it longer. Keep a close eye on it, our times might be a little off because we're at a high altitude. Don't worry about the work, this bread is TOTALLY WORTH IT!!!!! Cook the rice. I cooked it with 4 cups of water and 1/4 cup of butter. Preheat oven to 350 F degrees. Mix the 2 cheeses together. In a large bowl mix the shredded chicken with the enchilada sauce, refried beans and half of the cheese. Add rice, season with salt and pepper if needed, and mix well. Pour rice mixture into a large casserole dish. Top with corn then with remainder of cheese. Bake for about 20 to 30 minutes or until cheese melts and is bubbly. Stuff with scrambled eggs (optional) Enjoy. In our house we each have chores we do after mealtime. For a while it was Tabitha's job to wash the dishes and my job to dry them. We made up this game to make the time go by faster while we did our chores! You need 2 people for this game. One to wash dishes and one to dry and put away. Object of the game: Get the most points in the end. How to play: To begin with the "washer" washes three dishes and puts them in the rack or on a towel. Then the race begins. The washer wants to get 5 dishes in the rack at once and the dryer wants the rack to be empty. If the dryer is extra quick, the dishwrack might get empty! In that case, the dryer scores a point. If the washer gets 5 dishes into the wrack before the dryer takes them out, she scores a point. In the end, whoever has the most points wins! If the washer scores a point she must wait until the dryer has dryed two dishes and there are only three left in the rack, then the race goes on. If the dryer scores a point, the race is paused until there are three more dishes in the rack. Extra Rules: The washer is not allowed to wash or rinse any dishes ahead of time to make it easier during the race. The dryer does not score her point until the dishes are in the cubopard where they belong. Play this game and adjust the rules to your own personal version of this game!
These are the favorite of our family! Julia requested these for supper on her birthday! (She couldn't decide between these and cabbage with keilbasa which recipe I'll post another time.) These are wonderful for parties and when guests come to your house for dinner. Bacon wrapped chicken is also great with fried rice and steamed broccoli! I don't recommend it for children under 5 years old. They usually don't like this sort of thing. Ingredients: 2 Tbsp. chili powder 1 tsp. cumin 1⁄2 tsp. garlic powder 1⁄4 tsp. salt 1⁄8 tsp. pepper 1 1⁄3 cup light brown sugar 1 1⁄2 pounds boneless chicken breasts cut into tenders bacon with pieces cut in half Directions: Preheat oven to 350ºF. Generously spray a broiling pan with cooking spray and set aside.
In a bowl, mix together the chili powder, cumin, garlic powder, salt and pepper. Stir to combine. In another bowl, pour in brown sugar. Roll chicken pieces in chili powder mixture. Next, secure a piece of bacon around the chicken using a toothpick. Now roll in the brown sugar until well covered. Place on the prepared baking pan. Bake for about 30 minutes or until cooked through. If you like bacon crispier, place under broiler for a few minutes until bacon is brown and crispy. Enjoy! Every Christmas week we try to watch these two movies sometime. They're our christmas classics! For the kids: The Grinch that Stole Christmas Not the new movie, but the old cartoon. Every Christmas for a long time the kids have watched this movie! It's the story of a mean little green monster called the grinch who decided to put an end to christmas forever. So in the night he snuck down into the village and took all the decorations and the christmas trees and everything. In the morning when the people woke up, he couldn't wait to hear them crying cause they couldn't have christmas without all the presents and food and things. But instead of crying, he heard singing. They were still happy even though they had no presents! (We like to say that they're Christians so they can still sing and be happy even though there's no presents!) For older kids and adults The Nativity Story For about 3 or 4 years we've watched this movie every christmas eve. If there isn't time, we always try to make time somewhere around christmas to watch it. There are a few things in it that are different from the Bible. For example, Mary's attitude about having to marry Joseph at first. I think they put that in just to defy the Catholics that Mary really wasn't perfect. Also, the wisemen come to the stable instead of as the Bible says come to the house when Jesus is about 2. There are a few other little things but overall it's a wonderful portrayal of the christmas story from beginning to end. It is a little scary and intense at times. I recommend 10+ for kids. Even then, you know best whether or not your child would get scarred. When Herod kills the babies 2 and under it's pretty scary. Anyway, our family (me, Julia, and Tabitha and Mom and Dad) love this movie and recommend you watch it this year. (It comes in Spanish, too.) I hope that sometime this year you can make some time for these two holiday favorites of ours!
It's holiday candle season!! But what can you do with all those used candles you're finished with? I have the answer here! Heat up some water (enough to fill the empty candle jar) until it's boiling. Pour the boiling water into your used candle. Watch as bits of wax float to the top of the jar. It's very interesting! Leave the jar and water alone for an hour or so or until all the wax has come to the top. At this point, the water has cooled and the kids love sticking their fingers in the liquid wax at the top and letting it harden on our fingers before we pick it off! After it's been cooling a long time, the wax should harden again and you can take it out of the jar. It looks like this. Now we like to use these sweet smelling "cakes" to put in our pajama drawers to make them smell good. Now you can pour the water out of the jar. Wash the jar and peel off the labels. (Do this under hot running water.) The candle wicks should come off easily. Now instead of a good for nothing old candle, you have a sweet smelling cake of wax an an empty jar with a lid! Jars can be used to put your flour and sugar and things into or pencils and pens and more! You can also decorate your jars pretty using pretty card stock paper and modge podge glue. I hope you enjoyed learning how to recycle your old, used candles!
Would you like to relax on a chilly evening with something hot and sweet? Try quick 5 minute chocolate mug cake! It's great with strawberries! Ingredients: 1⁄4 cup flour 1⁄4 cup granulated sugar 2 tablespoons unsweetened cocoa powder (I used Hershey's) 1⁄2 teaspoon baking powder Pinch salt 3 tablepoons (1½oz) melted butter 3 tablespoons whole milk at room temperature 1 smallish egg at room temperature 1⁄2 teaspoon vanilla extract 1 oz (28 grams) semisweet chocolate lightly broken up 1 tablespoon water Directions: In a 2-cup capacity microwave-safe mug* (see note), whisk together with a fork, the flour, sugar, cocoa powder, baking powder and salt until well combined.
Add in the melted butter, milk, egg and vanilla. Whisk well to combine, making sure to mix in the flour mixture in the bottom. Place the chocolate pieces in the center of the mug. Do not push down; it will sink as it bakes. Drizzle the tablespoon of water right on top of the batter. Cook in microwave on full power for 1 minute and 20 seconds to 2 minutes (1 minute and 25 seconds is my magic number), or until the cake rises to the top, the edges look set but the center looks ever-so-slighly wet and shiny but not raw, and sticks slightly to the finger when touched. Do NOT overbake to ensure that saucy, molten-y interior. If the center still looks raw then give it another 5 to 10 seconds. The cake will fall after it comes out of the microwave. Let it cool for about 5 minutes so you don't burn your tongue, but the waiting also help thicken the sauce in the bottom. Share with a loved one or enjoy all by yourself! Soup Up!!!!At this time of year when it's rather chilly out, soup is such a nice comforting and warming meal. Especially if it has some of Mom's freshly baked bread on the side. Homemade bread is much cheaper to make than buying it! So here are all our favorite soup recipes! Cheeseburger Soup1⁄2 pound ground beef 4 tablespoons butter divided 3⁄4 cup chopped onion 3⁄4 cup shredded carrots 3⁄4 cup diced celery 1 teaspoon dried basil 1 teaspoon dried parsley flakes 1-3⁄4 pounds (about 4 cups) cubed peeled potatoes 3 cups chicken broth 1⁄4 cup all-purpose flour 1package (16 ounces) Velveeta process cheese cubed 1-1⁄2 cups whole milk 3⁄4 teaspoon salt 1⁄4-1⁄2 teaspoon pepper 1⁄4 cup sour cream In a large saucepan over medium heat, cook and crumble beef until no longer pink; drain and set aside. In same saucepan, melt 1 tablespoon butter over medium heat. Saute onion, carrots, celery, basil and parsley until tender, about 10 minutes. Add potatoes, beef and broth; bring to a boil. Reduce heat; simmer, covered, until potatoes are tender, 10-12 minutes. Meanwhile, in a small skillet, melt remaining butter. Add flour; cook and stir until bubbly, 3-5 minutes. Add to soup; bring to a boil. Cook and stir 2 minutes. Reduce heat to low. Stir in cheese, milk, salt and pepper; cook until cheese melts. Remove from heat; blend in sour cream. Yield: 8 servings (2-1/4 quarts). Save on prep time by using frozen cubed hash brown potatoes in place of fresh. To prevent soup from curdling, remove from the heat before adding sour cream. Cheesy Ham Chowder10 bacon strips diced 1 large onion chopped 1 cup diced carrots 3 tablespoons all-purpose flour 3 cups milk 1-1⁄2 cups water 2-1⁄2 cups cubed potatoes 1 can (15-1/4 ounces) whole kernel corn drained 2 teaspoons chicken bouillon granules Pepper to taste 3 cups (12 ounces) shredded cheddar cheese 2 cups cubed fully cooked ham In a Dutch oven, cook the bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. In the drippings, saute onion and carrots until tender. Stir in flour until blended. Gradually add milk and water. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the potatoes, corn, bouillon and pepper. Reduce heat; simmer, uncovered, for 20 minutes or until potatoes are tender. Add cheese and ham; heat until cheese is melted. Stir in bacon. Yield: 10 servings. Mexican Style Lentil Soup2 1⁄2 cup lentils uncooked 1 1⁄4 large tomatoes chopped 1 1⁄4 medium onion chopped 1 1⁄4 garlic clove crushed 12 1⁄2 slices bacon 1⁄3 cup cilantro chopped 5⁄8 onion 1 1⁄4 garlic clove salt and pepper Soak the lentils overnight. Boil them in about a liter of water with the half onion and the whole garlic clove. If the pot starts to run dry, just add more water. Remove onion and garlic after they finish cooking. In a large pot, fry the bacon until slightly crispy. Add chopped onions, jalapenos and crushed garlic. Cook until soft. Add tomatoes and cook for another 2 minutes. Add cooked lentils with their juices and stir. Season with salt and pepper. Simmer in low heat for 15 minutes. Serve immediately topped with fresh cilantro. Sweet Potato ChiliIt's that time of year! Homemade eggnog is such a delicious thing to have around. Here's the recipe: Note: If you don't use very finely granulated sugar, it will fall to the bottom so be sure you stir it before you serve. 12 medium eggs 11⁄2 cups sugar or (one and a half cups) 4 cups whole milk or or 1 liter of 4% 2 cups heavy cream (31% fat or higher) 1 tsp ground nutmeg or adjust to taste 1 tsp vanilla extract DIRECTIONS: Place the egg yolks and white sugar into the blender. Blend for about 2 minutes or until the mix thickens up. Pour the yolk-sugar mix into a large bowl, whisk in milk and cream. Continue mixing until the sugar has completely dissolved. Sprinkle in the nutmeg and pour in the vanilla, mix until well incorporated. Taste and adjust nutmeg if desired. Chill until ready to serve. Sprinkle ground cinnamon over each cup before serving. Enjoy!
Muffins are in-expensive, healthy, and delicious! Whenever our family is low on money Mom bakes a lot, because it's cheaper to use flour, oil, baking soda, and butter to make muffins then it is to buy boxes of cereal or bread. The trouble is, you have to make the muffins. You can't just pour them into a bowl. So, Mom came up with an idea to make all the breakfasts for a whole week simpler, tastier, and cheaper. On Saturday night (Sunday night will do, too) she made enough muffin batter to last a whole week! She'd make a container with the dry mix in it, lable it with a piece masking tape and a pen, and stick it in the pantry! She put the wet mixture in mason jars (containers will work, too) and stuk them on the door of the fridge. Now first thing every morning, Mom goes out and mixes the dry and the batter together and puts it in the oven! And it's winter and getting chillier so it's nice to have the oven on in the morning! There are many different sorts of muffins you can make. They can be seasonal, filled with dried fruit or nuts, chocolate, or just plain with cinnamon. Chocolate muffins are still healthy because you use cocoa powder to create the chocolate flavor with no extra sugar. Look at my other post I did before this one for a recipe on how to make velvet smooth spreadable butter from cold, hard, stick butter. You'll want some nice butter to go with your muffins! Here are some muffin recipes to get you started: Avocado MuffinsIngredients: 3 cups Flour 1 tsp Salt 1 Tbsp Baking Powder 1 cup Sugar (use healthy sugar like brown sugar, raw cane sugar, or demarrera.) 1⁄2 cup Butter softened 2 Ripe Avocados peeled and roughly chopped 2 Eggs 1 cup Milk 2 Tbsp Lemon Juice Directions: Pre-heat the oven to 400 degrees f. Spray 1 or 2 muffin pans with cooking oil {12 – 18 holes, depending on the size you want baked}. In a medium mixing bowl, sift together the Flour, Salt, Baking Powder and Sugar. Add the Butter to the dry mixture and rub in until it resembles crumbles. Place the Avocados, Eggs, Milk and Lemon Juice in a blender – blend until creamy and smooth – stir into the Flour mixture until just mixed. Fill the muffin holes either 2/3 or almost to the full mark – bake 25 – 30 minutes or until done and golden brown. Remove from the oven – let cool in the muffin pan/s for 10 minutes. Banana Blueberry Muffins1⁄4 cup canola oil 2 tbsp honey 2 eggs 3 very ripe bananas 1 1⁄2 cups whole wheat pastry flour 1 tsp baking soda 1⁄4 tsp salt 1⁄2 cup old-fashioned oats 1 cup blueberries 3⁄4 cup walnuts nonstick spray Preheat oven to 350 degrees. Combine oil, honey and eggs in a food processor. Beat in bananas; set aside. In a small bowl mix flour, baking soda and salt. Add oats. Carefully stir in blueberries or raisins and walnuts. Add to banana mixture, stirring just until moistened. Spray muffin cups with nonstick spray and fill 2/3 full with batter. Bake for 20-25 minutes or until golden brown. Banana Chocolate Chip MuffinsNonstick cooking spray for the pan (optional) 3 large eggs 1 1⁄4 cups granulated sugar 1 1⁄4 cups mild oil, such as vegetable oil or rice bran oil, plus more for the pan 2 teaspoons vanilla extract 3 cups all-purpose flour 1 teaspoon baking soda Kosher salt 3 ripe, brown bananas peeled and cut into chunks (about 1 pound) 1⁄2 cup unsweetened shredded coconut 1⁄2 cup plain yogurt, (Greek or regular) 1 cup chopped chocolate or mini chocolate chips, (dark or semisweet) Preheat the oven to 350°F (180°C). Spray two 12-cup standard muffin pans or two 24-cup mini muffin pans with nonstick cooking spray or slick them with oil. If you decide to use paper liners, it’s a good idea to spray them as well. Beat the eggs, sugar, oil, and vanilla on high speed until really well combined, about 2 minutes. Reduce the speed to low, add the flour, baking soda, and 1/2 teaspoon salt, and beat again until really well combined, about 2 minutes. Crank the speed to medium, add the bananas, coconut, and yogurt, and beat for 1 minute. Reduce the speed to low or switch to a spoon, add the chocolate chunks or chips, and mix until well combined. Divvy the batter among the prepared muffin cups, filling each 2/3 to 3/4 full. Bake until a toothpick inserted in the center of a muffin comes out without any crumbs or wet batter clinging to it, 20 to 25 minutes for standard muffins or 15 to 20 minutes for mini muffins. Turn the muffins out onto a wire rack and let cool for at least 10 minutes. (If you can resist demolishing the entire batch of muffins within minutes, they will keep in an airtight container at room temperature for up to 1 week or in the freezer for up to 1 month.) Banana Crumb Muffins3 1/2 cup all-purpose flour 2 teaspoon baking soda 2 teaspoon baking powder 1 teaspoon salt 7 bananas mashed 1 3⁄4 cup white sugar 2 egg beaten 3⁄4 cup butter melted 3⁄4 cup packed brown sugar 1⁄3 cup all-purpose flour 1⁄3 teaspoon ground cinnamon 7 1⁄4 teaspoon butter DIRECTIONS: 1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers. 2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups. 3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. 4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean. Chocolate Peanut Butter MuffinsThese are the special muffins we had on Seth's birthday! Filling: 1⁄2 cup butter melted 1⁄2 cup smooth peanut butter 2 cups powdered sugar 3⁄4 cups graham cracker crumbs couple pinches kosher salt Muffins: 3 cups flour 1 1⁄2 cups sugar 1⁄2 cup baking cocoa 2 tsp baking soda 1 tsp salt 1⁄2 tsp baking powder 2 2⁄3 cups mashed ripe banana 2⁄3 cup vegetable oil 2eggs Directions Prepare the filling: Mix the melted butter and peanut butter in a medium bowl. Add the sugar and cracker crumbs, and salt, then mix well until everything's incorporated. Roll the filling into 18 balls, a little smaller than a walnut, and set aside. You should have some of the filling leftover to crumble over the tops of the muffins later. Prepare the muffins: In a large bowl, combine the first six ingredients. In a small bowl, combine bananas, oil and egg. Stir into dry ingredients just until moistened. The batter is quite thick, but keep folding it gently, making sure to get the batter on the bottom of the bowl, and it'll all come together. Grease 18 muffins cups. You can use paper liners if you like, but I never do. I used a small ice cream scoop (3 tbsp capacity) to fill the bottoms of the muffin cups. Then place a peanut butter ball in each one, centered. Use the same scoop, or 3 tbsp worth of batter, and cover each peanut butter ball completely. Use the remaining peanut butter filling and crumble it over the muffins. Bake at 350 degrees for 20-25 minutes or until muffins test done. Cool on racks for about 10 minutes, then carefully remove the muffins to the racks to cool completely.
