This stuff with rice and spring rolls really beats all. Even Panda Express. I'm sorry my pictures aren't so great. I'm learning!
Anyway, about this amazing Asian dish, I first got the recipe from a friend at Grace Community Church, Michelle Mkinnon. When my mom had surgery she brought this meal over twice and it was a hit! So she gave me the recipe and we've made it several times since. Now I want to share it with you guys so that you can try it! Seriously, this stuff is awesome. Maybe its not quite as good as the taco casserole my mom makes that I requested on my birthday (click the link) astounding-taco-cornbread-casserole.html but it's still very good.
So the actual stir fry is a mix of vegetables, meat, and sauce. You can use any meat. Michell used to throw in some burger meat which made it delish! Don't worry about chopping a bunch of vegetables, you can buy a bag of frozen asian vegetables. If you'd rather go organic and chop your own I seriously reccommend this chopper. My mom has one and it makes chopping vegetables (especially onions) a blast! This peeler, too is really amazing, especially with potatoes. (Affiliate Links)
As I was saying, the stir fry is vegetables and meat (mostly) and you can make some rice on the side. Michelle always did white rice but we did brown. (White rice is super good but brown is a lot healthier.) Mom threw in some spring rolls as well that she'd bought frozen and microwaved. Now I'll quit talking and give you the recipe.
P. S. Don't be surprised about the peanut butter and honey. They're the secret ingredients to make this awesome! ;)
Asian Stir Fry
Serving: 1 Ingredients
Brown meat in a wok or large pan. Add the bag of frozen vegetables (or fresh veggies) and some soy sauce. Stir. Add the onion, pepper, spices, and more soy sauce. Then add the peanut butter and honey and more soy sauce if necessary. If the stir fry looks dry, add a little water. When the vegetables are thoroughly cooked, you're all done! Serve with rice. To make the rice in a rice cooker, put 2 cups of rice and 5 cups of water into the rice cooker and cook.

I hope you can try this recipe and by the way, I'm not exactly sure how much this recipe yields but (with rice) it was just enough for our family of nine with small portions. But this is satisfying in small amounts and the little ones didn't eat much. I hope that's helpfull.
