This egg and bacon pie is easy and delicious! I found this recipe because I was supposed to make Quiche Lorraine for school and I found this recipe. (Quiche Lorraine is basicly Egg and Bacon Pie but since it sounded too complicated, I changed the name.) It's very creamy and delicious and you can make the crust homemade! (Don't worry it's super simple.) Egg and Bacon Pie is perfect for breakfast, lunch, dinner, or even for a snack! If you would prefer to use ham instead of bacon you can, but I think bacon is easier. You can also leave out the onions if you want. This post contains affiliate links.

Preheat oven to 375 degrees F. Measure the flour into a mixing bowl and mix in the salt, add the shortening. Using a pastry cutter or two butter knives, cut in until you have it the consistency of coarse meal. (If you have a food proccessor, throw all the crust ingredients in and blend.) Sprinkle with the cold water one tablespoon at a time and mix lightly with a fork until the dough clings together and cleans easily from the bowl. Form a flattened ball with the pastry. Use a lightly floured surface and rolling pin to roll the flattened ball into a flat disk about 1 inch larger than the pie plate you are putting it in. Roll the pastry over your rolling pin and transfer it to the pie plate. Unroll it and ease into place, being careful not to stretch the pastry. Fold the edges down and pinch flute an edge around the crust. Filling: In a bowl, mix together eggs, cream, onion, ham and cheese. (If you don't want the onions to crunch, try frying the onions and bacon first. I didn't and it came out fine exept that the onions crunched. Also, try cutting the bacon into pieces with sissors. It's easier. And don't overdo the cheese. It will mess up the texture.) Pour the filling into the pie shell. Place the quiche into the preheated oven and bake for 35-40 minutes, or until a knife inserted into the middle of the quiche comes out clean. You can sprinkle extra cheese on top when you're finished.

A food proccessor is very helpful for making the crust. You can just throw all the crust ingredients in and it with become dough in a few seconds without you having to mix with a fork and knead into a ball.

Add torn bread, grated cheese, and chopped herbs on top of egg mixture, making sure ingredients are evenly dispersed and have not settled to bottom of mug. Ingredients will stay settled within the quiche mixture better if you do not whisk ingredients into egg mixture. Place mug in microwave, and cook on high for 1 minute, just until egg is completely cooked and quiche is slightly puffed. Garnish with fresh herbs and serve immediately. You can add tomatoes or spinach or anything else you want!
